In animation technique and artistry, I prefer Pocahontas. The colouring was amazing! In terms of story and generally of how we judge non-animated movies, I think the Lion King is best.

My primary concern is for a movie to be a good movie. I've seen good and bad stuff in just about every genre. And a few fall into the "so bad it's good" category. Some are more to my taste (horror, adventure, fantasy) than others (comedy, romance), that's all.
